‘Alma’ defines itself as being a fine dining restaurant with author food served in a sophisticated space. Strict yet relaxed, this restaurant was created by Henrique Sá Pessoa, a Portuguese chef that defines his cuisine as being flavoured, with refined taste, perfect technique, only using excellent products. His gastronomical philosophy comes from his influences and references: his trips around the world, his passion for the Asian continent, the knowledge on the traditional Portuguese cuisine, and the life in Lisbon.
The Chiado Restaurant offers special menus inspired by the Chefs classic dishes and it’s possible to choose from fruity favours to fish and seafood and also, ‘à la carte’ for those who like to like to choose every dish. In Alma, the first menu inspired by Henrique Sá Pessoas’s most known dishes it’s possible to eat Salted Foie Gras with apple, granola, beetroot and coffee and also Passion fruit Sorbet with Lime Merengue, among many others. In the menu that homages Portuguese fish and seafood, the dishes are a little different: Seafood and fish soup with algae and Carabineiro Rice.

The new menu Costa a Costa is a tribute to the fish and seafood from our coast. And it all begins with the intoxicating aroma of Fish Soup and seafood with seaweed, a literal dip in the sea that does not go unobtrusively into this stream. The tide rises with the Azevia that “gives to the coast” accompanied by peas, pork sausage from Alentejo and Dutch from noisette.
Next to the shore squad is Gallo Fish, which joins the cuttlefish, accompanied by mashed fennel and chives in a bewildering harmony. We must reserve space for Carabineiro rice. Your voluptuousness is a feast for the senses. In the words of Henrique Sá Pessoa, this is inspired “in traditional seafood rice. We wanted the carabineiro to be in all its splendour in the taste of rice, refined, concentrated and rich as one wants in traditional rice. ” Here we eat with our eyes and savour with time because it is the tasting that is about.
